Potatoes!! Here at Berto’s Bites we can’t get enough of them!! They are generally easy to find on sale and please even the most pickiest eater. These are indulgent but like our mama said, “Everything in moderation.” These are a great to accompany our Delicious Lemon Pepper Chicken recipe.
CHEF STYLE OVEN ROASTED POTATOES
4 large Idaho potatoes parboiled
1 1/2 stick of Butter melted
1/3 cup chicken drippings
Sea Salt and pepper to taste
Slice partially boiled potatoes. Next, coat potatoes with drippings and butter. Sprinkle salt and pepper to taste. Bake in the oven at 375 degrees about 15 minutes or until crispy. Serve and enjoy!

Today’s Lemon Pepper Chicken recipe is a family favorite! It only takes a few ingredients and can please a crowd! It is great for Sunday dinner or anytime really.
LEMON PEPPER CHICKEN
1 whole chicken
1 lemon sliced
Freshly ground pepper
Preheat the oven to 375 degrees. Next, run the chicken under cool water making sure to rinse off the entire chicken both inside and out. Pat dry with a few paper towels.
Add plenty of salt and pepper in the cavity of the chicken. Next, add a couple of lemon slices and the bay leaves to the cavity also.
Place the remaining lemon slices and some pepper under the skin of the chicken.
Lastly, rub olive oil generously on top of chicken and sprinkle the salt and pepper over the top.
Cook the chicken for approximately 1 hour and 15 minutes(I used a 5 lb. chicken for this recipe) or until your meat thermometer reaches the appropriate temperature for poultry. Let stand for 10 minutes. Serve and ENJOY!!

If there’s something that I love creating it’s something quick, easy and delicious. Shrimp can be prepared so many ways and these Chipotle Shrimp Wraps are perfect for everyday. Although they are simple your friends and family will think you spent a ton of time making these taste so amazing!
1tsp of chipotle powder
1/2 tsp lemon juice (optional)
Pinch of salt
Mix and let sit for a few minutes for the flavors to heighten.
CHIPOTLE SHRIMP WRAPS
Makes 4 servings
4 flour tortillas
1cup Chipotle mayo (recipe above)
4 green lettuce leaves
2 cups wild rice cooked and cooled
20 cooked shrimp
8 thinly sliced tomato slices
thinly sliced Red onions
First, you’ll want to warm the tortillas to make them pliable. This can be done in a skillet in a flash. Next, spread a generous layer of the chipotle mayo onto the tortilla.
Now you’ll want to add some crispy lettuce, thinly sliced tomato, onion, rice and shrimp.
Wrap like a burrito, cut in half and serve! Enjoy!
